Wax Gourd/Winter Melon: Cultural Considerations | Planting Guidelines | Recipes | Other Resources | More

Ever heard of or eaten Wax Gourd?
Wax gourds, also known as winter melons, are arguably the largest cold season melons. They can grow as large 15 inches in diameter and weigh more than 30 pounds, which is a lot of food!
The Winter melon is historically a food staple of China, but was first cultivated in ancient Egypt. Cubed and/or sliced, winter melon can be simmered, steamed, braised or parboiled and added to stir frys. It is great in soups and also suitable for pickling and/or a tasty treat diced and candied. Another nice attribute is that whole winter melons will keep in a cool place for months.

Do you like turnips? Here is a resource of resources including cultural considerations, planting guidelines, recipes, where to buy, and more.


Love them or not, turnips are a "starch" vegetable, but provide only one third the amounts of calories as an equal amount of potatoes. They are an excellent source of vitamin C, fiber, folic acid, manganese, pantothenic acid, and copper. They also offer a very good source of thiamine, potassium, niacin, and magnesium. In addition, they are a good source of vitamin B6 and E, folic acid, and riboflavin.

As a member of the One Community team, Ana is helping with research for the Duplicable City Center Kitchen, Earthbag and Aircrete crowdfunding campaign, Food Self-sufficiency Transition Plan cost analysis and temporary-kitchen design, the Ultimate Classroom design, and various elements of the seven village models too.

One Community welcomes Gabriel Madeira to the Graphic Design Team as our newest Partner/Consultant! Gabriel is a 4th-year Industrial Design student with a Technical in Graphic Design. He has a high working knowledge in many software programs including Adobe (Photoshop, Indesign, and Illustrator), Solidworks, Rhinoceros, AutoCAD, Keyshot, and Sketchbook Pro. With this knowledge and with his experiences in 3D modeling and rendering from his previous internships, Gabriel brings his experience to the One Community team to work on the dome-home furniture and Duplicable City Center renders.

Much like rice, wheat and maize (corn), potato crops are an important part the world’s diet. They are the largest crop in the US but China is the largest producer in the world with almost 1/3rd of all potatoes harvested in China and India. There are 1000s of varieties of potatoes but almost all commercially grown potatoes are 1 of only 5 different varieties: Russet, Yukon Gold, Kennebec, Desiree and Fingerling.
