Squash: Cultural Considerations | Planting Guidelines | Where to Buy | More

There is evidence of squash cultivation as far back as 8,000 BC in Central Mexico, Peru, and the Eastern United States. It was a staple of the diet of early civilizations because virtually the entire squash plant is edible: leaves, tendrils, shoots, stems, flowers, seeds and the fruit can all be eaten. Here's an open source guide to some heirloom varieties if you'd like to grow your own with more diversity than what you can find in the store.
